When I was in 8th grade I took the best class ever: Food Science.
Which, let's be real, people, food science means cooking class which means food!

We made some super awesome things in that class and I got some killer recipes that I still use all the time. For example, that is where I learned the best ever cinnamon roll recipe. My dad used to tell me that my cinnamon rolls would be a reason for any guy to marry me, if nothing else.

But in all reality, I made those cinnamon rolls and the very next day, Ben proposed to me. Coincidence??? I think not!
But I've only made that recipe like once since we've been married, so really the jokes on him. Ha!
Anyway, longest tangent ever, because this post is definitely not about Cimmies (yeah, that's what I call them).
It's about Mac and Cheese.
And not the one that Joey stars on in Friends (anyone? Anyone?).
And we're not talking about the box version either, guys.

This is a totally basic version. It comes together in about 20 minutes and it's warm and gooey and it's about five billion and ten thousand times better than the box kind.
I made this particular batch with whole wheat macaroni for the heck of it. I've made it with almond milk and cream instead of regular milk as well and it also turned out super great.
Sometimes I substitute just to prove I can.
...Or because I totally realize I'm out of something but the noodles are already cooking so I have to improvise...

So the next time you get one of those comfort food cravings-give this guy a try. It will come together in just about the same amount of time as the box version, but it will taste so much better! Here's the ol' recipe:
RECIPE: Homemade Macaroni and Cheese
1/4 cup flour
1/4 cup butter
2 cups milk
1/2 teaspoon salt
1-2 cups shredded cheddar cheese
3 cups macaroni, cooked and drained
Prepare noodles according to package. In a saucepan, melt the butter. Remove from heat. Add flour and salt. Mix until well blended. Whisk in milk and return to heat. Bring to a boil, stirring constantly. Add grated cheese and cook until cheese is just melted. Remove from heat and stir in noodles. Serve or keep warm in oven until ready to serve.
