Confession: Ben and I have been trying to cut back on processed sugar.
Which just means that I've been working extra hard to find recipes that are naturally sweetened (i.e. fruit, agave, honey, etc.) but still deliciously satisfying.
So far, the hunt has been quite successful.

These are easy to make, with just a tiny twist on the classic no bakes. There's more peanut butter in the mixture so you get a really deep chocolate peanut butter flavor. They are super rich and satisfying.
These don't set up quite the same as the regular cookie, which, it turns out, I'd actually prefer. These guys stay soft and creamy, even, where the regs seem to dry out a little. Not so with these guys.
RECIPE
Natural No Bake Cookies
1/2 cup butter (could substitute coconut oil)
1 cup natural peanut butter
3/4 cup honey
6 Tablespoons cocoa powder
2 1/4-2 1/2 cups oats
1 teaspoon vanilla
Warm butter, peanut butter, honey and cocoa in a medium size pan over medium heat, until butter melts. Remove from heat and add remaining ingredients. Stir until everything is combined. Use a cookie scoop to drop cookies onto a greased pan, or onto wax paper. Let rest for about an hour.
